Ingredients
  

  • 2-3 Persimmons Fresh
  • 16 oz Fresh Mozzarella Cheese Sliced
  • 1/4 cup Pomegranate Seeds
  • 8 tbsp Pesto
  • Olive Oil
  • Salt & Pepper

Instructions
 

  • Slice the persimmons 1/4'' thick, set aside. Arrange and alternate the persimmons and mozzarella on your serving platter. Pour some olive oil on top, and sprinkle some salt and pepper.
  • Sprinkle pomegranate seeds on top. 1 tbsp at a time, spoon pesto in groupings on the persimmons. Enjoy! Serve with crackers or by itself.
