Homemade Marshmallows
So fluffy and airy!

Ingredients
- Spray Vegetable Oil
- 1 cup Powdered Sugar
- 3 Envelopes Gelatin
- 1 1/3 cups Granulated Sugar
- 1 cup Corn Syrup
- 1/4 tsp Salt
- 2 tsp Vanilla Extract or your favorite flavor
Instructions
- Spray 9x13in pan with oil. Using a sieve, dust the pan with confectionery sugar. Knock out excess sugar. Pour 1/2 cup water and gelatin in stand mixer bowl and whisk to let it bloom. Set aside. In large saucepan, combine sugar, corn syrup, salt, and 1/2 cup water. Place over medium heat and bring to 250F soft ball stage. Don’t mix too much.
- Remove from heat and with the mixer on low speed, gradually add the hot syrup in a thin stream down the side of the bowl. Gradually increase speed to high. Beat until thick and forms and ribbon. About 5 min. Mix in vanilla. This is also the time to add mix ins like nuts or berries if you want to.
- Scrape the marshmallow into the pan and using wet fingertips, smooth out the surface. Let stand at room temperature overnight.
- Dust cutting board with confectionery sugar. Gently pull the marshmallow off of the pan. Using a knife, and a lot of powdered sugar, cut your desired shape. Coat all with confectionery sugar so they don’t stick together. Enjoy!!
