Hasselback Delicata Squash

Ingredients
  

  • 2 Delicata Squash Halved and Seeded
  • 2 Garlic Cloves Minced
  • 4 tbsp Maple Syrup
  • 1 tbsp Brown Sugar
  • 3 tbsp Melted Butter
  • 2 tbsp Olive Oil
  • 3 tbsp Goat Cheese
  • 1 Bunch Pea Sprouts

Instructions
 

  • Preheat oven to 400F.
  • Place the delicata squash cut side down on a lined baking sheet. Using a cooking brush, brush the squash with olive oil, until completely covered on the inside and outside.
  • Bake for 10 minutes. Then remove from oven.
  • Combine the minced garlic, maple syrup, brown sugar, and melted butter in a small bowl. Set aside.
  • Place one half of a squash on a cutting board and using a knife, gently cut slits into the squash but not going all the way through. Make each slit 1 cm wide, or desired thickness. Repeat for remaining halves.
  • Place the halves back onto the baking sheet. Brush the maple syrup mixture all over the slits. Bake for another 15-20 minutes or until desired doneness. Slightly cool for 5 minutes.
  • Top with crumbled goat cheese and pea sprouts. Enjoy!

Notes

To cut the slits easier, put two chopsticks on either side of the squash and cut down into the squash until it hits the height of the chopstick. This will help quicken the process of cutting.
