Ingredients
- 10 Large Yukon Gold Potatoes
- 1/2 cup Half & Half
- 5 tbsp salted butter
- 3 tbsp Chives
Instructions
- Cut potatoes into large pieces. Place the cut potatoes into a large bowl of water, fully submerged. This helps prevent oxidation of the potatoes. In a large pot, boil water, enough to cover the potatoes. Boil the cut potatoes for 15-20 minutes, or until easily pierced with a fork.
- Drain the potatoes and rinse them with cold water. Peel off the skin with your fingers, the skin should come off easily. Place the potatoes back into the pot and using a masher, mash the potatoes until smooth, hardly no clumps.
- In a small saucepan, heat the half and half until warm. Drizzle the half and half into the mashed poatoes. Cut the butter into large chuncks and mash them into the potatoes. Taste the potatoes and adjust taste and creaminess with cream and salt. Enjoy!
