Chocolate Soufflé For Two

  • 2 Ramekins

Ingredients
  

  • 1/4 cup Unsalted Butter
  • 2 tbsp Sugar Plus more for coating
  • 4 oz Semi Sweet Chocolate
  • 3 Eggs Separated
  • Pinch Salt
  • 1/4 tsp Cream of Tartar
  • 1 tbsp Powdered Sugar Garnish

Instructions
 

  • Remove middle rack of oven to create room for soufflé to rise. Preheat the oven to 400F.
  • Generously butter the ramekins and then coat with white sugar. Tap out the excess sugar and discard.
  • In medium bowl, melt the chocolate and butter in microwave or over a double boiler. Cool slightly on the counter. Whisk in egg yolks and salt.
  • Using an electric hand mixer, beat egg whites and cream of tartar until soft peaks. Add 1 tbsp sugar at a time, mixing for 30 sec after each addition, and then mix until the whites look glossy and stiff.
  • Gently whisk ¼ of the whites into chocolate mixture to lighten and loosen it. Fold in remaining white. Do not over mix as it will cause it to deflate. Gently pour the batter into the ramekins. Rub your thumb around inside edge of dish to create a 1/4 inch space for the soufflé to rise. Gently place the ramekins in the oven and reduce heat to 375F. Do not open door for the first 20 min.
  • Bake until it is puffed and center moves only slightly when gently shook. This will take about 25-30 min. Garnish with sifted confectionary sugar. Enjoy!

Notes

If you would like the soufflé to be runnier, bake for 3-5 min less time. 
It is easier to bake if you place the ramekins all on a baking pan and place in oven all at once. 
You can easily double the ingredients to make more!
