Shaved Brussel Sprout Pomegranate Salad

- 1 lb Brussel Sprouts Shredded
- 1 Granny Smith Apple Sliced Thin
- 1 Pomegranate Seeded
- 1/4 Cup Toasted Walnuts Chopped
Dressing
- 1/8 cup Olive Oil
- 1 Orange Juice From 1 Orange
- Orange Zest From 1 Orange
- 4 tbsp Lemon Juice
- 3 tbsp White Vinegar
- 2 tbsp Apple Cider Vinegar
- 1 tsp Dried Thyme
- 1 tbsp Dijon Mustard
- Salt and Pepper
Instructions
- Using a sharp knife, cut off the ends of the Brussel sprouts, then cut them thin shreds. Add the shreds to a large bowl and toss with white vinegar.
- To make the dressing, combine the dressing ingredients together and mix well.
- Add the pomegranate seeds, apple slices, and toasted walnuts to the Brussel Sprouts and pour the dressing on top. Toss until combined. Enjoy!
