Shaved Brussel Sprout Pomegranate Salad

Ingredients
  

  • 1 lb Brussel Sprouts Shredded
  • 1 Granny Smith Apple Sliced Thin
  • 1 Pomegranate Seeded
  • 1/4 Cup Toasted Walnuts Chopped

Dressing

  • 1/8 cup Olive Oil
  • 1 Orange Juice From 1 Orange
  • Orange Zest From 1 Orange
  • 4 tbsp Lemon Juice
  • 3 tbsp White Vinegar
  • 2 tbsp Apple Cider Vinegar
  • 1 tsp Dried Thyme
  • 1 tbsp Dijon Mustard
  • Salt and Pepper

Instructions

  • Using a sharp knife, cut off the ends of the Brussel sprouts, then cut them thin shreds. Add the shreds to a large bowl and toss with white vinegar.
  • To make the dressing, combine the dressing ingredients together and mix well.
  • Add the pomegranate seeds, apple slices, and toasted walnuts to the Brussel Sprouts and pour the dressing on top. Toss until combined. Enjoy!
