Dragonfruit Coconut Chia Pudding

Ingredients
- 1/4 cup Frozen Dragonfruit Pieces
- 1/2 cup Oat Milk
- 3 tbsp Chia Seeds
- 1 tbsp Maple Syrup
Coconut Yogurt
- 1/2 cup Plain Yogurt
- 1 tbsp Coconut Flakes
- 1 tbsp Maple Syrup
Instructions
- Blend frozen dragonfruit and oat milk until smooth. Pour into a small bowl and mix in the chia seeds and maple syrup. Let chill overnight in fridge.
- The next day, give the chia seeds mixture a stir to make sure everything is combined. In a small bowl, combine the yogurt, coconut flakes, and maple syrup. Spoon the yogurt on top of the chia seeds. Garnish with coconut flakes and some dragonfruit. Enjoy!
